Basic Elements of Cleaning and Sanitation for Food Facilities and Packinghouses

If you are a small food processor or a fruit and vegetable grower with a mobile or stand-alone packinghouse and want to learn the basic principles and applications of cleaning and sanitizing these facilities this workshop is for you.

This one-day, hands-on workshop is designed to provide participants with the necessary tools to develop, implement, control, and monitor cleaning and sanitation procedures for small food facilities, packing houses, or any other small operation where food is processed and packed for retail and/or food service purposes. Participants will be exposed to the principals of cleaning and sanitizing food contact surfaces, regulations regarding chemicals used to clean and disinfect these surfaces, hazards within the food/produce industry, personal hygiene, personnel practices, control measures and monitoring tools specific to their cleaning and sanitation practices, writing cleaning and sanitation SOPs, and the basics within design and construction of food facilities. Additionally, participants will be exposed to hands-on activities tailored at demonstrating some of the practices specific to cleaning and sanitation procedures.

At the end of this workshop participants will be able to design and implement cleaning and sanitation procedures and will have the basic knowledge needed to validate, control, and monitor these procedures.

Enrollment Information

Cost: $260, which includes all course materials, coffee breaks, lunch, parking, and hands-on trainings / demonstrations. Refundable until April 12, after which there will be a $50 cancellation fee.

  • 9:30-10:30 a.m. — Hazards and risk ID
  • 10:30-10:45 a.m. — Break
  • 10:45-11:45 a.m. — Sanitary design, zones
  • 11:45 a.m.-12:45 p.m. — Basics of environmental monitoring, traffic zones
  • 12:45-1:45 p.m. — Lunch
  • 1:45-3:30 p.m. — Hands-on activities
  • 3:30-3:45 p.m. — Break
  • 3:45-5 p.m. — Hands-on activities
  • 5-5:15 p.m. — Last comments and adjourn

Requirements: water proof and closed-toe shoes, long pants, short sleeve shirt

Location: Fresh-cut and Kitchen facilities, CSU Spur Terra building

Parking: A parking pass will be provided upon arrival or emailed to all participants. Participants are responsible for displaying the permit as indicated in the pass to avoid infractions.

JOCELYN HITTLE

Associate Vice Chancellor for CSU Spur & Special Projects, CSU System

Jocelyn Hittle is primarily focused on helping to create the CSU System’s new Spur campus at the National Western Center, and on supporting campus sustainability goals across CSU’s campuses. She sits on the Denver Mayor’s Sustainability Advisory Council, on the Advisory Committee for the Coors Western Art Show, and is a technical advisor for the AASHE STARS program.

Prior to joining CSU, Jocelyn was the Associate Director of PlaceMatters, a national urban planning think tank, and worked for the Orton Family Foundation. She has a degree in Ecology and Evolutionary Biology from Princeton, and a Masters in Environmental Management from the Yale School of Forestry and Environmental Studies.

Jocelyn grew up in Colorado and spends her free time in the mountains or exploring Denver.

TONY FRANK

Chancellor, CSU System

Dr. Tony Frank is the Chancellor of the CSU System. He previously served for 11 years as the 14th president of CSU in Fort Collins. Dr. Frank earned his undergraduate degree in biology from Wartburg College, followed by a Doctor of Veterinary Medicine degree from the University of Illinois, and a Ph.D. and residencies in pathology and toxicology at Purdue. Prior to his appointment as CSU’s president in 2008, he served as the University’s provost and executive vice president, vice president for research, chairman of the Pathology Department, and Associate Dean for Research in the College of Veterinary Medicine and Biomedical Sciences. He was appointed to a dual role as Chancellor in 2015 and became full-time System chancellor in July 2019.

Dr. Frank serves on a number of state and national boards, has authored and co-authored numerous scientific publications, and has been honored with state and national awards for his leadership in higher education.

Dr. Frank and his wife, Dr. Patti Helper, have three daughters.
